For the first time, we will feature all estate grown fruit from our Grand Valley vineyard sites! Paired with a curated menu by our very own Chef Scott, this will be a night to remember! Your ticket includes 6 pours of wine, 5 plated courses of food plus passed appetizers, and gratuity for our team. This dinner includes a SNEAK PREVIEW of our 2024 Estate Albarino from Mt. Garfield Estates - for one night only! This wine is unreleased and will only be available for purchase the night of this event. If you are one of the many people who loves our Albarino, come by to get bottles before this wine becomes unavailable again until release in 2026! On Thursday, September 18th, Carboy Winery Palisade invites you to join us for an unforgettable experience of enjoying farm to table cuisine alongside pairings of the Grand Valley's Finest Wines. Prepare your taste buds for a culinary adventure with five delectable courses prepared by Carboy Winery's Executive Chef, Scott Hybbeneth. Perfectly paired with both unreleased and library vintages of Carboy's best wines out of the Grand Valley, guests will experience the best food, beverage and hospitality available in Palisade! The menu will consist of passed appetizers and a welcome pour of CO.secco sparkling wine upon arrival, followed by a five course wine pairing experience featuring Estate wines from Carboy's Grand Valley vineyards. First Course: Bison Carpaccio with chevre souffle and tomato jam paired with 2024 Native Fizz Blanc sparkling pet-nat style wine, Grand Valley Second Course: Mushroom Tartlette with herb salad, sabayon paired with 2023 Zweigelt, Grand Valley Third Course: Butternut Squash Agnolotti with miso brown butter, leeks, spiced pecans paired with 2024 Albarino, Grand Valley (UNRELEASED WINE - AVAILABLE ONE NIGHT ONLY!) Entree Course: Wine Braised Duckling with olives, gigante bean cassoulet paired with 2022 Chambourcin, Grand Valley Dessert Course: Palisade Peaches with olive oil cake, sage semifreddo paired with 2024 Native Fizz Rose paired sparkling pet-nat style wine, Grand Valley
